Cucumbers, Onions and Tomatoes

When making all my recipes, I look for easy! I'm a no complications, no disaster and no confusions kind of girl. I want to always make something that will 1) be good and 2) be done in time to enjoy it. My mom and Dale love cucumbers so my dad and I sat back and watched them enjoy this one!

This used to be something my mom asked my grandmother to make for her every year. There was something about grandmas recipe that was good. Have you noticed I have been talking about her {grandma} a lot lately? As a kid, I loved to go help her cook/bake. She had passed down ALL of her recipes to me when she went to the nursing home and could no longer good. This women was a saint in the kitchen. Having six kids and a husband that expected a FULL meal for dinner. I mean meat, potato and vegetable EVERY night for dinner. She stayed home with her kids and made this happen everyday. Picking from his garden she cooked a lot of things from there but she loved to be in the kitchen. I'm sure that she would be just ecstatic that I have a food blog and am taking on this love just like she did. I'm sure there are some recipes she doesn't want me to share but hey I'm letting all of you enjoy it now!! :)

3 medium cucumbers, peeled and sliced 
1/4 inch thick
1 medium onion, sliced and separated into rings
3 medium tomatoes, cut into wedges

1/2 cup vinegar
1/4 cup sugar
1 cup water
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
1/4 cup oil

Combine ingredients in a large bowl and mix well.
Refrigerate at least 2 hours before serving.
