Homemade Granola Bars

Ingredients:
3 Cups Quick Oats
3 ripe bananas
1/2 Cup whole wheat flour 
3/4 tsp baking powder
1/3 Cup brown sugar
1 tsp cinnamon
Toppings as desired, I used some M and M's and on half I added chocolate chips on top when I put in the oven


Directions:
1. mash the bananas with the oats until smooth (using a fork is easiest)
2. mix in brown sugar
3. mix together flour, baking powder and cinnamon then add them to the banana and sugar mixture
4. mix in any adding toppings- chocolate chips, fruit or nuts. Or you can spread them on top like I did.
5.On a cooking sprayed sheet or dish lay out the bars, you can make into shapes if you choose as well.
6. Bake at 350 degrees for 7-10 minutes
7. Let cool for a few minutes or eat warm:)

Peanut Butter Cheerios Bars

So who has not had these a time or two right?

As I got home from work tonight it was like nesting but in full force baking mode. I made Banana Bread, Homemade Granola Bars, Peanut Butter Cheerio Bars and Homemade Blueberry Muffins. Woosh, on top of it being 99 degrees outside, hot oven and being 9 months pregnant...yeah I was sweating! I was able to freeze a couple of the items and the rest will be eaten before too long.

I had to snag a picture of the bars before there was a whole row gone. My mom said, do you have any of those Peanut Butter Cheerios, I said sure while I just started to whip them together. She quickly ate two before they were even cooled off :)

So, if you are looking for a 5 minute snack just throw these together!!

1 cup sugar
1 cup corn syrup
1 cup peanut butter
1 tsp. vanilla
5 cups Cheerios

In a large sauce pan, combine sugar and corn syrup. Bring to a boil over medium heat, allow to boil for about a minute, remove from heat. Add peanut butter and vanilla and mix until smooth. Add cheerios and mix until coated.

Today is Friday and I'm back to blogging - what a time to get back into it with mear 6 days
of pregnancy left. Well 6 days give or take some...hoping to take!

What are your Top 5 for the week?

1. false labor - 7 hours of false labor? yeah, that is how I spent my Tuesday night this week. I was really hoping that was it so I finished making out some last minute bills, putting things away, doing Maddox's laundry etc. Dale was prepping to get the garbage out, sprinklers off and fridge cleaned out. He was like a Mr. Mom ! I guess I should have taken some pics because that may not EVER happen again. My husband and housework - don't quite go together...

2. cooked freezer meals - I had went to the store and bought groceries to make 8 freezer meals, LAST WEEK. After my false labor I thought well maybe I should get to moving so I spent one night cooking up meals for us to have in the freezer for when the little one arrives. I will be posting recipes soon!

3. envoy is fixed - My car has been a nickel and dimer this year, after all I did just pay it off so that is bound to happen, right? This months fix was a bad wheel bearing and I can tell you that for the expense it was WELL WORTH IT! I have a quiet car again :)

4. started Christmas shopping - yeap, I'm that girl :) super prepper. I like to have things done in time and I love buying for Christmas so I started with stocking stuffers for my niece and nephew and of course can't wait to buy my little man his first Christmas present :)

5. saw a movie - Dale and I went to see the movie 'We Are the Miller's' - now we loved The Heat but I have to say I really think that The Miller's topped that. HILARIOUS MUST SEE!!

Freezer Meal - Chicken Enchiladas

Chicken Enchiladas

Prep time:  20 mins 
Cook time:  30 mins 
Total time:  50 mins
Serves: 10


Ingredients
4 Chicken Breasts
1 Medium Onion, diced
3 Cups Cheddar Cheese, Shredded
10 Medium Flour Tortillas
2 Cans Red Enchilada Sauce

Instructions
Preheat oven to 350

Cook the chicken breast for about 25 minutes or until done. Once chicken is out and cooled, shred it up and set aside.
Mix cheese, onion, chicken and 1 can red enchilada sauce in a bowl.


With a large scooper, fill each tortilla with mixture. Roll it up and place it in large 9×13 baking dish with seams down. Repeat until all chicken mixture is used.


Pour the second can of enchilada sauce over the top.
Top with cheese.


For a freezer meal - Let thaw, preheat oven at 350 degrees and bake for 25 – 30 minutes, until melted and bubbly.

Serve with sour cream, salsa, lettuce beans or rice.

D-Day is Coming :)

With only 11 days left until my due date, the BIG DAY is coming! :)

Though the pregnancy has been extremely easy, I think it's time for it to come to an end. We are ready to meet our son.

We are now at the - 'wait, did we forget something' stage. Did I make sure to wash all of his clothes, did we pack phone chargers in the bag and finally is the car seat all in check? This list never seems to stop, my mind has not stopped running for the last two weeks! Did I do this, do I need to rearrange his drawers again, YES I did say AGAIN :)

Did I clean his ceiling fan? Did I vacuum his closet? - Yes, I am that clean freak. Those that know me know that I get it honest. I had a list a mile long of things I wanted to do before the little man appeared. It started with wiping down the wood work in the whole house and went on to shampooing carpets, washing windows, cleaning ceiling fans, washing doors, rearranging closets to cabinets, trust me it went ON and ON :) BUT in one day I did all but pull out the appliances! Did it kick my ass? Yes most defintely but that might have been the only night I slept through the night without getting up for a bathroom break in 9 months HA!

Does everyone feel the need to clean this deep before and baby, probably not but I did and I can't wait to bring the little man home to a clean house and just enjoy his presence!

This weekend I have planned to stock up on freezer meals, that's IF I don't go into labor :)

Raspberry Lemonade Cupcakes

Raspberry and lemon are such a great summer pairing, why not make a cupcake with the two together??

You can't make it with one flavor stronger than the other and this recipe is the perfect combination! The cupcake is topped with a smooth Swiss meringue buttercream, topped with some fresh lemon peel.

Yield: 2 dozen

For the cupcakes:

1¾ cups all-purpose flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1¼ cups (8 oz.) sugar
Zest of 1 large lemon, preferably organic
1 cup (2 sticks) unsalted butter, at room temperature
3 large eggs, at room temperature
½ cup sour cream
¼ cup milk
Juice of 1 large lemon

For the frosting:
3 large egg whites
½ cup sugar
1 cup (2 sticks) unsalted butter, at room temperature
Pinch of salt
2-3 tbsp. fresh raspberry puree*
Zest of 1 lemon
Candied lemon slices, for garnish
Fresh raspberries, for garnish
