Blueberry Biscuits

Hello Readers!

Wow, how life can get away from you. Where does it go?!?!

I think about how my life has changed in the last 7 months and just wonder how I was blessed with such amazing opportunities. Here is an update from The Tetmeyers...

I became a mother and quit my full time job when Maddox was born. He is now 7 months old - eating fruits and veggies, crawling, pulling himself up to things, walking with help and spoiled rotten! Imagining life without him is unthinkable!! Dale is still working at HON and had a two week stay in Germany in February. I got a part time job as a bank teller here in town. I am getting back to the routines of blogging.

I have realized how much I have missed sharing things with everyone and missing the world of blogging. oh and I miss pinterest - period! two best things to do in my free time!

So who doesn't love breakfast for dinner?!!?

I found this awesome recipe for Blueberry Biscuits and wanted to try this instead of the standard pancakes and eggs.
So as I baked 3 seperate cake orders for this weekend, I squeezed in this quick little breakfast dinner.

Of course, I had a little helper while in the kitchen :)

Blueberry Biscuits

Biscuits

2 cups all-purpose flour
1 cup milk
1/3 cup white sugar
5 tablespoons butter
4 teaspoons baking powder
1 teaspoon salt
3 ounces fresh blueberries

Preheat oven to 350. In a large bowl add and mix the salt, sugar, flour and baking powder. Add cold milk and blueberries to the dry ingredients and fold in. Cut the butter into chunks, add the butter into the biscuit dough. Knead on a floured surface, continue until the butter chunks are mixed evenly throughout. Using a rolling pin, roll dough to be about 1/4 inch thick and then use a biscuit cutter to make out about 6 biscuits.

Bake these for about 8 minutes or until golden brown.

Melt 1 tablespoon of butter in the microwave and brush onto the biscuits.

Glaze

1 cup powdered sugar
1/8 cup water
1 teaspoon vanilla
1/2 teaspoon of lemon juice

Mix all ingredients together and after the butter, drizzle this glaze and enjoy!
