Can you believe that tomorrow is the 4th of July??!! Me either, honestly, I'm going to have a one year old in two months. The saying is true - the older you get the faster time goes.
As I write this post I'm enjoying sitting in front of the TV catching up with KLG and Hoda. I would have loved to have a mini makeover this morning!!! What a perfect start to the day! I'm headed into work this afternoon, so I am enjoying mornings with Maddox and getting things done around the house. My work schedule is crazy lately with my grandma being hospitalized two times in 2 months but we are working through it and I think she might come home today which is wonderful news.
Last night, I sent my mom to Fareway for dinner stuff while I got the floors scrubbed at home. I was going to start with steak in these Egg Rolls but went with hamburger instead.
This is what happens when I don't want to patty up burgers and grill them. With all the rain, I'm not sure I trust going out to grill!!
So what better than to put loose hamburger in a wrap and bake it right!?
Ingredients:
2 lbs 93% ground beef
1 small onion - chopped
1 tablespoon Worcestershire
Salt/Pepper
1 lb bacon
1 tablespoon Dill Relish
1 1/2 tablespoons Yellow Mustard
1 bag shredded cheddar cheese
1 package of Egg Roll Wraps
Cook up the hamburger with onion, Worcestershire, salt and pepper in it. Once that is done put the hamburger in another bowl and use that skillet to fry the bacon. Once the bacon is cooled just peel it apart into small pieces and add the hamburger and onions back into the pan. {drain the bacon grease first}
Add the relish, mustard and let simmer for about 10 minutes. While that is simmering, get the Egg Roll wraps ready. Make sure you wet the corners of the wraps. If they are not a little wet they will not stick together and hold up while being baked.
Lay the meat mix in with some cheese on top and roll those bad boys up. Bake on 325 for about 25 minutes. One thing I didn't do was brush them with an egg wash to get them to brown and crisp up {I would suggest doing that}
We served these with some ketchup or a dollop of sour cream! Enjoy !!
